NEW RECIPE BOOK, NEW THINGS TO COOK

Every time I buy a new recipe book, I really can't sleep. it is because I want to try cooking all the dishes that are listed in the recipe book. I even stay up late just reading all the dishes and I really love reading it. This new recipe book that I acquired was the one reported in the television to have limited copies sold in the market. The price of this new recipe book is higher compared to the recipe books that I acquired before. At first I was hesitant in buying the recipe book because it is expensive. But then I realized that this recipe book is a limited edition and I am gonna be one of the fortunate chefs to have one.

What I like about this new recipe book is that it has shinny papers that you don't have to worry when it get a little wet. The picture illustrations also in the new recipe book are very tempting. That I why I really cant sleep. I want to start the cooking of all the recipes inside. I already made several book marks for the recipes that I think will be a blast in my restaurant. My assistant chef is also excited to see the new recipe book that I acquired.

CREAM CAKE FOR ALL

I am preparing cream cake for meryienda this afternoon. It is because Cream Cakes are the best meryienda delight for the kids and the kids at heart. I am expecting 5 of my nieces to be around in my house. I was told that they would visit me first in the restaurant where my office is at. What I like about cream cakes is that it easy to prepare and kid really love it.

The best partner for cream cakes is chocolate drinks. Full iced glasses of chocolate drinks will be a sure hit for my nieces when they come to my house. I also prepared their dinner already. I am sure that they will be staying for tonight since tomorrow is the independence day celebration. It is a holiday in their school so they don't have to worry about their classes.

My nieces usually visits me every month. That is why I make sure that I prepare for them and the cream cakes that I baked is their favorite.

CAKE DECORATING CONTEST

I was invited by some friends to join a cake decorating contest. The event will be on June 19, Saturday. The event is said to be sponsored by a local cake company and the lucky winners will be given scholarship grants to learn more about cake and cake decoration. Aside from the grants, the winner will also be absorbed in their company and the salary is big.

There are three categories in the cake decorating contest. The single round, the double square and the three layer cake division. My friend was one of the event coordinator and he is very confident in me. This is a great opportunity for me to show what I got in cake decorating. I won several awards last year, local and abroad in cake decorating. The only problem is that I cannot just leave the restaurant because the winner will be absorbed in their company.

LET THEM IN

Let them in! As I said to my chef during the eat all you can launch just last week in the restaurant. In the buffet table, there were almost 20 available home cooked dishes ready and hot to be served. According to the consultant, the buffet style of eating is the most ideal way of dining right now because many want more than they paid for.In operating a buffet restaurant, you must make sure that viands will be replenished immediately when the bottom of the serving plate is obvious already.

BBQ Toasted Patty Melts

BBQ Toasted Patty Melts

Ingredients:

1 large onion, sliced
1 Tbsp. oil
1/4 cup KRAFT Original Barbecue Sauce
1 lb. ground beef
4 KRAFT Singles
8 slices whole wheat bread, toasted

Procedure:

COOK onions in hot oil in large nonstick skillet on medium-high heat 8 min. or until golden brown, stirring frequently and adding barbecue sauce the last few minutes. Remove onions from skillet; set aside. Wipe skillet with paper towel.
SHAPE meat into 4 (1/2-inch-thick) patties. Cook in skillet on medium heat 4 to 6 min. on each side or until done (160ºF). Top with Singles; cover. Remove from heat. Let stand until melted.
FILL toast slices with burgers and onions.

Ingredients:

1 lb. extra-lean ground beef
4 KRAFT DELI DELUXE Process Bacon Cheddar Cheese Slices
4 onion slices (1/2 inch thick)
4 hamburger buns
1/4 cup KRAFT SANDWICH SHOP Horseradish Dijon Flavored Reduced Fat Mayonnaise

Procedure:

SHAPE meat into 4 (1/2-inch-thick) patties.
GRILL 4 to 6 min. on each side or until done (160°F). Top with cheese; grill 1 min. or until melted. Meanwhile, place onions and buns, cut-sides down, on grill; cook 1 to 2 min. or until onions are lightly browned and buns are lightly toasted, turning onions after 1 min.
SPREAD mayonnaise onto cut sides of buns; fill with cheeseburgers and onions.

Ingredients:

2 cups finely chopped cooked chicken breasts
1-1/2 tsp. chili powder
2 Tbsp. MIRACLE WHIP Light Dressing
2 Tbsp. KRAFT Light Ranch Dressing
8 slices Italian bread
1 large tomato, cut into 8 thin slices
4 KRAFT 2% Milk Singles

Procedure:

HEAT panini grill to medium-high heat. Mix chicken, chili powder and dressings.
FILL bread slices with chicken mixture, tomatoes and 2% Milk Singles.
GRILL 3 to 5 min. or until Singles are melted and sandwiches are golden brown on both sides.

Ingredients:

2-1/2 cups chopped cooked chicken breast
1/4 cup KRAFT Light Mayo Reduced Fat Mayonnaise
2 Tbsp. OSCAR MAYER Real Bacon Bits
1 green onion, thinly sliced
2 Tbsp. KRAFT Light Ranch Dressing
8 slices multi-grain bread
1 tomato, cut into 8 thin slices
4 KRAFT Deli Fresh 2% Milk Reduced Fat Sharp Cheddar Cheese Slices

Procedure:

MIX chicken, mayo, bacon, onions and dressing; spread onto 4 bread slices. Top with tomatoes, cheese and remaining bread.
COOK in preheated grill pan or skillet sprayed with cooking spray on medium heat 3 min. on each side or until golden brown on both sides.

Ingredients:

6 OSCAR MAYER Selects Angus Beef Franks
1 can (15 oz.) chili
6 hot dog buns
1/3 cup KRAFT Shredded Cheddar Cheese
1/3 cup chopped onions

Procedure:

HEAT grill to medium heat.
GRILL franks 7 to 9 min. or until heated through, turning occasionally.
MEANWHILE, heat chili as directed on can.
PLACE franks in buns; top with chili, cheese and onions.

Ingredients:

1 OSCAR MAYER XXL Premium Beef Frank
2 slices OSCAR MAYER Fully Cooked Bacon
1 hot dog bun
1 Tbsp. KRAFT Shredded Sharp Cheddar Cheese
1 Tbsp. KRAFT Original Barbecue Sauce

Procedure:

PLACE frank and bacon in bun; sprinkle with cheese. Wrap in paper towel.
MICROWAVE on HIGH 30 to 45 sec. or until frank is heated through and cheese is melted.
TOP with barbecue sauce.

GIANT SPAGHETTI MEATBALLS

GIANT SPAGHETTI MEATBALLS

Ingredients

* 1 pound lean ground beef
* 1/2 cup Italian seasoned dry bread crumbs
* 1 egg
* 1 (26 ounce) Pasta Sauce
* 8 ounces spaghetti, cooked and drained


Directions

  • Combine ground beef, bread crumbs and egg in medium bowl; shape into 12 meatballs.
  • Bring pasta sauce to a boil over medium-high heat in 3-quart saucepan. Gently stir in uncooked meatballs.
  • Reduce heat to low and simmer covered, stirring occasionally, 20 minutes or until meatballs are done. Serve over hot spaghetti and garnish, if desired, with grated Parmesan cheese.

COOKING SECRET

In cooking, to make a fried dish more tasty consider putting lots of garlic. Fried the garlic for it produces a tasty aroma on the fried food. Fry the garlic first then add the meat that you will be frying. The cooking secret is tones of garlic.

EASY FOOD PREPARATION

In preparing food, make sure that all the ingredients are all prepared. Slicing it will also be a good thing before heating up the pans and pots. When preparing a dish for tomorrow, it would be best to slice the ingredients like vegetables and meat and place it inside the refrigerator so that it will be easy for cooking. But when the dish requires freshness, slicing of the ingredients will be a bad thing because slicing it exposes the freshness of the ingredients, such as fish and meat. When slicing, consider using a slicing machine when you are not well versed in the knife mode. By using the slicing machine, it would the slicing job lot more easier.

always remember that in cooking, it does not require a masters degree before you can start cooking. All you need is the guts to do it and believe that you can do it. In cooking, it requires love and passion for the art, the art of food preparation. Many believed that cooking is hard. But actually it isn't. When you like what you are doing then you will never go wrong. If you don't get it in the first, pretty sure the second time will be perfect.

NEW TECHNOLOGY FOR THE RESTAURANT

After seeing the great potential of incorporating new technology in the restaurant. That idea will soon be a reality in the resturant. There are 5 new equipments to be added in the kitchen. The major one in the ipad for cooking inn the kitchen. Using the advance technology, it would make sure that cooking will be a lot easier and fun because of the new technology.

There will be no scanning of re3cipe books. Only the ipad will do the trick in the kitchen. Chefs in the restaurant need to be trained on how to use this new equipments. Risking using without information will just lead to more problems and costly too.

HOME SWEET CHEF HOME

The chef is finally home at last. The chef went to Australia to meet some important clients of the restaurant. There will be a new culinary school in town and the chef will be the dean of the culinary school. In the business meet, the chef was given several handouts for the cooking school that will be open next semester. In the recent tally, there are 500 students still waiting and wanting to enter the culinary school. In this school, the chef see to it that the tuition is affordable and students will get the best out of their money.

All of the necessary things are all being ironed up right now. This is in preparation of the culinary school by October. Just very excited to be the dean finally of a culinary school. All instructors will be chefs and they must have a qualification before they can teach cooking in the culinary school. The Australian chefs are very good in their art of cooking.

SQUID IT

The chef jujst cooking the food for dinner. It is a squid and it is good. Squid dish is the easiet dish to be prepared. it is because squid is easy to cook and all the ingredients that you place on the squid are easily absorbed by the squid. in cooking squid, it would take around 30 minutes before the food is done. Never over cook the squid or else it will drain all the water in it. Squid is cooked good with lots of garlic and ginger. Try cooking fried squid and roasted/grilled squid.
