CHICKEN PANDAN

One of the most easy to prepare chicken is the chicken pandan. No wonder this dish is always the customers favorite. The excellent taste of fresh chicken the additional flavor that pandan brings, makes the dish more extra special all the time. For the chicken pan, here are the ingredients:

250 grams chicken thigh
cilantro
1/4 tbsp chopped garlic
1/2 tbsp oyster sauce
1/2 tbsp seasoning
1 tbsp brown sugar
1/4 tsp salt
1 tbsp cornstarch
1 tbsp sesame oil
pandan leaves
cooking oil for deep frying

Procedure of cooking:

1. De-bone chicken thigh and mix with cilantro, garlic, oyster sauce and seasoning, brown sugar, salt, cornstarch and sesame oil.
2. Warp the chicken with pandan leaves. This is in preparation for the frying of the chicken.
3. In a pan, deep-fry chicken pan 3 to 4 minutes or until done.

It is also best to serve the chicken pandan with chili sauce to add more taste to the dish.

LECHE FLAN

Leche Flan is considered the most prepared dessert in the world. it is because it is easy to do and the ingredients are very easy to comply. For the ingredients, here are:

1 cup white sugar
12 egg yolks
1 can condensed milk
1 can evaporated milk
dayap rind

Procedure:

1. Caramelize the sugar. Put 1 tsp caramelized sugar in the mold. Set aside.
2. Mix egg yolk, condensed milk, evaporated milk and dayap.
3. Pour mixture in pan lined with caramelized sugar.
4. Cover with aluminum foil.
5. Steam 25 minutes or until done. Unmold and let cool. Chill.

PRAWNS WITH GREEN PEAS

Prawns with green peas ingredients.

1 egg white
1 tbsp cornflour
8 oz prawn, peeled
3 tbsps oil
1 slice ginger, peeled and chopped
1 spring onion, chopped
6 oz green peas
1-1/2 tbsp salt
2 tbsps sugar
1 tbsp sherry
1 tbsp sesame seed oil

Procedure;
1. Mix egg white and cornflour; coat prawn with mixture. Refrigerate mixture 20 to 30 minutes.
2. Heat oil in frying pan and stir fry prawns for about 1 minute. Remove and drain on paper towel.
3. Heat remaining oil until hot, toss in ginger and spring onion.
4. Add green peas, prawn, salt, sugar and sherry. Stir constantly 1 minute; add sesame seed oil just before serving.

BACON CARBONARA

Bacon carbonara is one pasta delight that I want to share to you all guys. For the the bacon carbonara, here are the ingredients:

1 cup diced bacon
2 tbsps butter
3/4 cup grated Parmesan cheese
3 egg yolks, beaten
salt and pepper
spaghetti pasta noodles. cooked al dente
parsley, chopped

In skillet, fry bacon and butter until brown. Over low heat, add in cheese, egg yolk and cream. bring to a boil then turn heat off. Do not overcook or mixture will curdle. Season with salt and pepper. Toss sauce with cooked noodles. Sprinkle with chopped parsley.

QUALIFYING FOR THE CHEF POSITION

This morning, I was in the convention center for the chef auditions for the culinary contest. There were around 40 chefs that went to the venue of the audition. This is not just a chef contest but a way to be discovered. My assistant chef was also there and me. The chef contest was all about cooking and the dishes that a chef can cook in a given minutes.

Me and my assistant chef qualified for the next round. If my records are correct, the next screening will be on the third week of March and there will be more cooking presentation, as we were told by the organizer. No recipe books just all cooking skills of the dishes. The judges are 2 American Chefs and one Italian chef. As early as now, I am already looking at the recipe book so that when the cooking start, I know what I am going to cook.

TINUMOK RECIPE

Tinumok recipe is something that is new to most culinary geniuses. It is because there are few recipes written about this type of fish dish. For this recipe, here are the ingredients:

25 pieces Gabi leaves
2 tbsp bagoong alamang
2 cups gata or coconut cream
salt and pepper to taste.

Filling:
1/2 kg shrimps
1/4 kg flaked fish
150 grams onion, chopped
100 grams ginger, minced
1 kg buko meat, chopped

Mix all together the ingredients for filling. Wash gabi leaves and wipe to remove excess water. Put 30 grams filling in the middle of gabi leaf. Fold both ends of the leaves. Add bagoong alamang on top and 2 cups gata. Bring to a boil over low heat until cooked. Dash with salt and pepper.

To serve, add 2 tablespoons thick coconut cream and one piece sliced sili labuyo.

PAMPANO GRILL WITH PANDAN LEAVES

Pampano is a kind of fish that is widely preferred in the culinary world because of its freshness and the tenderness of the meat. For this recipe, here are the ingredients:

2 pieces 300 grams pampano fish
1 pc calamansi
1/4 tsp salt
pepper to taste
pandan leaves

Slit the pampano fish and remove center bone. Squeeze calamansi juice all over the fish. Season with salt and pepper to taste. Warp the fish with pandan leaves. Grill over medium-high coals on both sides. Serve with hot sauce.

KITCHEN TIPS: THAWING SHRIMPS

Thawing shrimps, to prevent growth of bacteria, thaw shrimps in the refrigerator instead of room temperature. This is always what I do to make the shrimp dishes well prepared. This tip in thawing shrimps is being thought in the culinary school. I learn this there when I was still studying.

PESANG TILAPIA

Pesang Tilapia ingredients:

1 tbsp oil
2 cloves garlic, crushed
1 medium onion, sliced
1 small ginger, cut into strips
1/4 cup miso
5 cups rice washing
1 small green papaya, cut into chunks
1/4 cup patis
1/4 tsp peppercorn
1 can tomato sauce
3 pcs large tilapia fish, each cut into 2 serving slices
1/4 kilo mustasa

Heat oil in saucepan and saute garlic, onion, ginger and miso. Add rice washing, papaya, patis, peppercorn and tomato sauce. Simmer for about 10 minutes. Add tilapia. Simmer again for 10 minutes. Add mustasa. Allow to simmer until tilapia is cooked.

PIZZA DOG

Pizza Dog is the favorite of my hubby. When I am preparing pizza, Pizza Dog is always his request to me. Well, I just want to share this pizza. This pizza is also very easy to prepare and the ingredients are the following:

1 can pizza sauce
1 tbsp banana catsup
1 tsp mustard
1 prepared pizza crust
6 pieces hotdog, sliced
1 cup shredded cheese.

Combine pizza sauce, catsup and mustard. Mix well. Spread onto pizza crust. Top with hotdog slices and sprinkle cheese. Put pizza on cookie sheet and bake 375F over 15 minutes or until crust is crisp and cheese is melted. Slice and serve.

A CHEF'S DREAM

A chef's dream is really to own his own food business and be successful in the culinary industry. That was my dream before. I believe that I am slowly getting to that dream right now. Before when I started my restaurant business, I was still in confuse on what to do and the things that I will be cooking for the restaurant. I never imagine that the restaurant and the foods that I am cooking will be a big hit.

My kitchen right now are being prepared by my culinary friends and some sponsors of my restaurant. I never imagine that this will happen to me and the business will be this big already. I am just around 5 years in the business and I consider that a big achievement for a chef like me. They say business that is controlled by by a single owner would only last 2 to 3 years. But for my culinary business, it survived that stage already. Thanks to my chef team and staffs that are very supportive. By next month I will be traveling again to learn new recipes and thing about cooking. I am just one happy chef.

GARDEN FRESH PIZZA

Garden Fresh Pizza is my favorite pizza. It is because it has the freshness of things that I like in a pizza. For the Garden Fresh Pizza, here are the ingredients. Trust me, this is very easy to prepare.

Ingredients:

prepared pizza sauce
1 pc pizza dough
mozzarella cheese, grated
black olives, sliced
button mushrooms, sliced
tomato wedges

Garden Fresh Pizza cooking procedure:

Spread pizza sauce on the pizza dough. Sprinkle with grated mozzarella cheese. Arrange other toppings. Heat in oven for a few minutes or until cheese melts. Slice in preferred slices then serve.
