PARMASAN BROILED FISH

You will notice that I cook mostly fish related meals. It is because it is summer already. For this meal, we will be needing the following ingredients:

2 lbs fish fillet, skinned
2 tablespoons lemon juice
1/2 cup grated Parmesan cheese
1/4 cup margarine, softened
3 tablespoons mayonnaise
3 tablespoons chopped green onion
1/4 teaspoon salt
dash of hot sauce

Let start the cooking. Place fillet in a single layer on well-greased baking platter. Brush fish with lemon juice. Let stand for a while. Combine remaining ingredients well. Broil fillet 4 to 6 minutes or until fish flakes easily. Remove from the heat and spread cheese mixture on fish fillet. Broil 2 to 3 minutes more until light brown.

PAMPANO SA PANDAN

This meal that I will be sharing the most favorite of my hubby. He likes fish and I would cook it for him. This is a simple one and you can follow it easily. The ingredients are the following:

2 pieces or 300 grams Pampano fish
1 piece calamansi or lemon juice
1/4 teaspoon salt
pepper to taste
Pandan leaves

Lets start the cooking shall we, okay by slitting the pampano fish and remove the center bone. Squeeze calamansi juice all over the fish. Season with salt and pepper. Wrap the fish in the pandan leaves. Grill over medium heat coals on both sides. Serve with hot sauce. You can make your own sauce. You can use soy sauce and onion mixture. Very easy meal.

PERRY CRAB OMELET

I just can't get away from the omelet fever. That is why I am cooking seafood omelet again. But this time I will be using crab for the omelet. The ingredients are the following:

12 pcs medium size crab, washed well
1/2 cup cooking oil
4 cloves garlic, minced
2 medium size onion, finely chopped
3 large tomato, finely chopped
salt and pepper
6 eggs, scrambled
1 kilo baguio beans, cooked in butter
4 pcs big red bell pepper, cut into big strips

Now that the ingredients are complete, we should start cooking. Steam the crab ans separate the meat from the shell ( don't break the shell). heat oil pan and saute garlic and onion until brown. Add tomato, then after while add crab meat, salt and pepper, let it cool. Stuff crab meat mixture into the shell and top with scrambled eggs. Arrange the crab shell on serving platter and garnish it with buttered beans and red bell pepper rings on top.

LOBSTER OMELETTE

Who said omelette is for breakfast only! Well let use make something that would simply arise our imagination. This dish that I am cooking for you guys has a long history and class. Lobster and egg is a totally different from each other. But once blended together, a perfect meal for our hungry stomach. The ingredients are the following:

1 fresh lobster, about 850 grams
salt to taste
white pepper, freshly ground
vegetable oil
fresh ginger, chopped
1 clove garlic, chopped
1 medium size green pepper, chopped
2 spring onions, chopped
25 ml cheese wine
25 ml light soy sauce
10 eggs
1 teaspoon sesame oil
1 teaspoon chopped Chinese parsley
seasonings

Now that all are in, cooking starts by cleaning the lobster, remove the meat. Chop meat into samll peices; season with salt and pepper. Heat oil in wok and saute ginger and garlic 3 minutes. Add lobster, spring onions, green pepper, Chinese wine and soy sauce; bring to boil. Lower heat and simmer for 2 minutes; transfer to a large bowl.

Beat eggs lightly with fork and pour to bowl. Add sesame oil and parsley; adjust seasonings. heat remaining oil in wok, tilt to make a sure entire surface well greased. Pour omelette mixture and cook over fairly low heat until eggs sets. Turn and break up slightly during cooking time. This dish is best served when hot. This is not just a breakfast meal. But also a meal for all time.

GRILLED SALMON STEAK

To those who are fish dish seekers, this one is for you guys. Salmon is a very taste kind of fish, especially cooked the grilled way. let us make this dish a special one. The ingredients are the following:

200 grams salmon
1/8 teaspoon iodized salt
1/8 teaspoon pepper
2 tablespoon vegetable oil
1 tablespoon balsamic vinegar
1 tablespoon mustard

Let's start cooking. Marinate the salmon fish with salt and pepper. This is very basic when cooking grilled food. Then cook evenly using sizzling plate with vegetable oil. Serve with balsamic vinegar and mustard. This dish is very ideal when on a camping in the mountains or a Sunday gathering of friends.

GARLICKY FRIED EEL

Many people are strange eaters. Some would eat grasshopper and insects. But this meal that I will be preparing is not totally like that. In some Asian countries, this meal is the main course of the night and said to be very expensive. Enough of the information. Let us go straight to the kitchen and start cooking. The ingredient for the dish are the following:

500 grams eel
100 grams cornflour
oil for frying
50 grams Hong Kong powder
1 egg
1 teaspoon salt
1/4 teaspoon goyong powder
1 teaspoon pepper powder
1-1/2 teaspoon rice wine
1 teaspoon sesame oil
10 grams red and green bell pepper
1 teaspoon minced garlic
1 teaspoon minced garlic fried

Now that the ingredients are all in, maybe it is already the right time to start cooking. Coat eel with cornflour. Deep-fry and drain. In non-stick pan, put fried eel. Add remaining ingredients. Cook dry. Easy to cook right! The meal is also best during drinking sessions.

FRIED SHRIMPS WITH TARTAR SAUCE

To all shrimp-lovers, this dish will surely be your favorite. I am a big shrimp fanatic. Every time I cook this dish, many would always ask for more. For this recipe we will be needing the following ingredients for cooking and these are:

1 kilo large shrimps
1 tablespoon calamansi juice or lemon juice
salt and pepper
3 tablespoons flour
1 egg, beaten
1/4 cup breadcrumbs
cooking oil

For the tartar sauce, we will be needing the following:

3 hard-boiled eggs, mashed
2 tablespoons pickle relish
1/4 cup mayonnaise
1 piece red bell pepper, finely chopped
salt and pepper

Having all the ingredients only means one thing, we are ready for cooking. Shell and devein shrimps. Remove head, leave tail intact. wash and drain. Marinate shrimps with calamansi juice, salt and pepper mixture for 10 minutes or more. Coat shrimps with flour, dip in egg, then in breadcrumbs. Deep fry until golden brown. Serve with tartar sauce. To make the dish more elegant looking, it would be best to garnish it with fresh green leafy vegetables. By just writning about this dish, I am already hungry again.

CHOCO-NUT WAFFLES

Thinking of cooking or baking? Well, this delight is the best food for you kids and for the whole family. For this recipe, you will be needing the following ingredients. These ingredients are very much available in the market today. These are:

2 cup pancake mix (your brand of choice)
2 cups chocolate milk
1/3 cup melted butter
2 eggs
1/2 cup chopped nuts
1-1/2 pints vanilla ice cream
chocolate syrup

Having these ingredients, you can start preparing the waffles. Start by combining the first four ingredients. Beat until fully smooth. Stir in nuts. Bake on hot waffle iron until steam stops. Serve hot with vanilla ice cream and chocolate syrup. This mixture is for 5 servings. easy and affordable.

APPLE SLUSH

The summer days are now here. The weather outside is getting hotter and hotter. Many would go to the beach and resorts to spend the day by swimming and enjoying the water. To make it more rel;axing and refreshing a cool drink would be best. The things that will be needed in making apple slush are the following.

1/2 cup concentrated apple juice
1/2 cup soda water
2 cups crushed ice

Combine all the ingredients in blender and blend well for 10 seconds. Pour into 2 tall glasses. Decorate with apple slices and little umbrella is desired. What a nice and refreshing drink for this summer.

ANISE-FLAVORED ICED TEA

Another cool beverage that is best for this summer days. The ingredients are the following:

2 tetra packs iced tea drink, any brand will do
pinch of anise
1/2 piece lemon, sliced into thin pieces
ice cubes
sugar ( an optional ingredient)

Let us start the mixing so that we can start drinking. Just follow this:

Combine iced tea drink and anise in pitcher; stir to let anise flavor blend with the iced tea. Strain anise and discard. The anise ingredient is for additional aroma. Combine iced tea drink with remaining ingredients. Stir to blend well. Best served with some finger goods while watching TV or just after an aerobics workout.

CAFE MOCHA MUDSLIDE

let us enjoy and relax and have a cup of dish beverage that will surely make you forget the hot summer days. The ingredients are the following:

1 cup coffee creamer
4 tablespoons instant coffee
2 cups vanilla yogurt, frozen
2 cups ice cubes

The mixing goes like this:

Place coffee creamer and instant coffee in blender; cover. Blend until coffee is dissolved. Add frozen yogurt and ice; blend it again until smooth. The colder the better when this beverage is served. Mudslide anyone!

GRILLED PAMPANO FISH WITH DELIGHTFUL SAUCE

Pampano fish is just one of the most widely cooked fish in every hotels and restaurants in the world. It is because of the fish's white meat. Very Ideal for those who wants a healthy food. For this dish we will be needing the following ingredients for cooking.

1/4 cup diced small tomato
1/2 piece onion, sliced, divided in half
1 tablespoon lemon juice
1 tablespoon diced green mango
2 tablespoons diced green onion
salt and pepper to taste
1/3 cup vinegar
1 tablespoon sugar
1/4 cup diced cucumber
1/4 cup diced red pepper
200 grams Pampano fish fillet, skinless
vegetable oil, as needed

Let as start cooking by making a green mango salsa: combine tomato, onion, lemon juice, mango and green onion. let stand 30 minutes. Chill. Season with alt and pepper. Making salad: combine the vinegar, sugar, salt and pepper. Set aside. Mix together cucumber, red pepper and onion. Pour vinegar mixture and mix well for 30 minutes. Then dip the fish fillet in oil and sprinkle with salt and pepper on both sides. Grill on skin side first to make cross marks. Turn and grill until done. Serve this dish with steamed rice, salad and green mango salsa on top of the fish. Simple and very nutritious dish for all.

CHOCOLATE MILK SHAKE

For those people who loves chocolate, this drink is for you guys. Simple and tasty drink. The things that will be needed are the following:

1 cup milk
1/2 cup ice cream
1/4 cup chocolate syrup
whipped cream

Let us start by doing these mixing:

Combine milk, ice cream, and chocolate syrup in blender. Blend 1 minute. Pour into tall chilled glass. Top with spoonful of whipped cream or you may serve it plain. It really doesn't matter as long you drink this beverage. That is already enough.

CHOCOLATE DOUGHNUTS

Thinking of having a nice food for your snack time and even for those who are craving for chocolate. This baked dish is the one that many are looking for. I will just make this simple so that many can follow and bake it. Actually the recipe is easy and doing it can be very fun. The ingredients are the following:

fat for deep-frying
1-1/3 cups sifted all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/8 teaspoon powdered nutmeg
1/4 cup semisweet chocolate pieces, melted
1 egg
1/2 cup graduated sugar
1/3 cup commercial sour cream
confectioners' sugar

Let's start the baking procedure by heating a deep pan with fat. Let fat heat slowly. Sift first 5 ingredients together in bowl. Beat in melted chocolate. In a bowl, beat egg and graduated sugar together until light and thick. Beat in cream then mix the chocolate mixture. Drop dough by teaspoonfuls into hot fat. Fry. Turn nuggets as they fry until brown and done. Drain on paper towels. let it cool. Sprinkle with confectioners' sugar while warm. Yummy and healthy doughts ready to serve for the family.

TOKWA'T BABOY

The ingredients of this dish are the following:

1/2 kilo pork, cut into cubes
salt
5 pieces tokwa
oil
1 cup vinegar
1 cup soy sauce
1 teaspoon salt
2 heads garlic, minced
3 small onions, diced
1 teaspoon brown sugar

The procedure in cooking this dish:

in casserole, boil pork in enough water with salt; let simmer until tender. Then set aside. Fry tokwa in hot oil until toasted; slice into cubes. Then set aside. In sauce pot, mix vinegar, soy sauce, salt, garlic, onion and brown sugar. Pour sauce over pork and tokwa. This dish is best serve when hot.
